# Aomori Cider and Sake: Tasting at A-FACTORY, and What to Carry Home

Aomori cider and sake can both be sorted out in one afternoon at the northern end of the Tōhoku Shinkansen, with no Japanese needed. At **A-FACTORY**, a 2-min walk from the East Exit of Aomori Station, a self-serve machine pours eight local ciders one glass at a time, ¥250 a pour, with every operating step printed in English. Buy what you liked on the way out: the refrigerated case at Shin-Aomori Station held **Denshu** Tokubetsu Junmai (720 ml) at ¥1,848, one bottle per person, and 300 ml bottles of Aomori sake from ¥462 (prices as marked on 11 August 2026). The one thing that changes this plan: everything in that case is sold as requiring refrigeration, so buy it last, not first.

## Cider you have never heard of, made from apples you already know

Aomori grew about 61% of Japan's 2024 apple crop — 370,500 t of 609,200 t, on Ministry of Agriculture, Forestry and Fisheries figures checked August 2026 — and a small share of that crop is fermented rather than eaten. The apple English-speaking readers already know is Fuji — bred at the Tōhoku Research Station in Fujisaki, Aomori, registered as a cultivar in 1962 and named after the town, not the mountain. Aomori's cider comes from that same fruit stock, and is almost invisible in English-language travel writing.

The word on signs is *shiidoru* (シードル), from the French *cidre*, and it behaves like the cider a British or Irish drinker expects: fermented apple, lightly sparkling, across a dry-to-sweet range. A-FACTORY brews its own behind glass on the ground floor and pours other Aomori cideries alongside — two of the three on our visit were from Hirosaki, the castle town inland. ## How the A-FACTORY tasting machine works

The tasting machines at A-FACTORY are self-serve, prepaid and labelled in English at every step — one of the easiest drinking experiences in Tōhoku without Japanese. Each pour was priced at ¥250 on the machine screens (11 August 2026). The instruction card beside each machine runs to five numbered steps:

- Buy a tasting card at the second-floor restaurant.
- Insert it in the slot at the top right — **IC chip to the left**; the sign says plainly *!No Coin!*
- Put a cup under the nozzle of the cider you chose. Cups sit to the left.
- Touch the glass mark **once**.
- Return the used card to the left of the machine, and put the used cup in the bin.

Two warnings on the panel catch first-timers: the buttons take a moment to respond and pressing repeatedly freezes the machine, as does starting two pours at once — hence the header, "Please extract one glass at a time".

The second-floor restaurant sells the tasting cards, and also serves buckwheat galettes — this one with prosciutto, a fried egg and cheese (11 August 2026).

Because the card is sold upstairs, the second-floor restaurant is not a detour, and its buckwheat galettes make a good lunch around a tasting. Shopping at A-FACTORY runs 10:00-19:00 and the restaurant 11:00-18:00 at our last check (August 2026), individual tenants varying.

## Eight ciders, sweet to dry — which one to pick

Eight ciders from three cideries were pouring across the two machines on 11 August 2026, each with a printed five-step Sweet-Dry scale and any award it had won. Six of the eight carried an award — four golds, one silver, one bronze — and three sat at the sweet end of the scale, two in the middle, three on the dry half.

If you only pour two, make them **Aomori Cidre Standard** — the house cider and the mid-scale reference point — and **Kimori Cidre Dry**, one of the three on the last step of the dry scale, and the only unfiltered one of the eight, with a secondary fermentation in tank. Sweet-cider drinkers should take Kimori Cidre Sweet: its card says almost no acidity.

## Sake: what we drank in Hachinohe, and where to buy it

Aomori's sake is easier to meet in a bar than to buy, and the station shop stocks the brands you were served the night before. At an izakaya in Hachinohe on 10 August 2026 we drank three Mutsu Hassen (陸奥八仙) from Hachinohe Shuzō, the brewery in the same town, alongside Hōhai (豊盃) and Denshu (田酒). One pour was a *hiyaoroshi*, the release normally shipped in autumn after a summer of maturation; in the town where it is made, it was open in early August.

Denshu is the name English-speaking sake drinkers are most likely to recognise: made by Nishida Shuzōten in Aomori City, founded 1878, its Tokubetsu Junmai is brewed from Aomori's Hanafubuki rice at 55% polishing. It is also the bottle people are told is hard to find, and it was on a shelf at Shin-Aomori Station: 720 ml at ¥1,848 including tax, in the souvenir shop's refrigerated case, under a handwritten one-bottle-per-customer sign and a yellow strip reading "these products require refrigeration". Stock, price and the limit will all move.

## Not drinking? The apple juice is the point

Aomori's non-alcoholic option is no consolation prize: the prefecture's apple juice is sold by variety. The JR East vending-machine brand *acure made* sells it as **straight-pressed 100% juice**, not the concentrate-and-water product that fills most machines, and says so on the bottle in English: "THIS JUICE IS MADE EXCLUSIVELY FROM APPLES GROWN IN JAPAN'S AOMORI PREFECTURE AND IS 100% PURE APPLE JUICE".

The *acure made* machine we bought from was stocked with **Fuji**; the bottle we found at Aomori Station on 11 August 2026 was **Kiou** (きおう), a yellow apple bred in Iwate and registered as a cultivar in 1994\. The bottle is labelled 青森りんご — Aomori-grown fruit of an Iwate variety. Fuji is the supermarket apple you know; Kiou is the one you cannot buy at home. What is loaded changes by location and season, so read the labels.

## Carrying it home: the Shinkansen first, the plane separately

No rule limits bottles on a Shinkansen, so the only real constraint between Shin-Aomori and Tokyo is temperature. The run takes about three hours by Hayabusa and the sake is sold as requiring refrigeration — in August, buy it last, keep it out of a sunny window seat, and ask for a cold pack.

Flying home is a separate problem. Liquids over 100 ml cannot pass security into the cabin, so bottles travel in checked baggage, and alcohol allowances by strength, volume and destination vary by airline and arrival customs. Check both before you buy: the Shinkansen answer does not apply at the airport.

Buy small: of the six chilled items priced in that case on 11 August 2026, four were 300 ml sake bottles, small enough to carry three brands home instead of one 720 ml bottle.

## Where to stay if you want an evening at A-FACTORY

Staying in central Aomori rather than at Shin-Aomori is what makes an unhurried cider evening possible: A-FACTORY sits beside the East Exit of Aomori Station and closes in the early evening. ### Where can I buy Denshu sake in Aomori?

Denshu Tokubetsu Junmai, made by Nishida Shuzōten in Aomori City, was on sale in the refrigerated case of the souvenir shop inside Shin-Aomori Station at ¥1,848 for 720 ml on 11 August 2026, limited to one bottle per customer. Because it is a limited-stock item at a station shop, treat availability as luck, not a plan.

### Can I take sake on the Shinkansen?

Yes — Japanese railways place no limit on carrying bottled drinks, including alcohol, so a bottle bought at Shin-Aomori goes straight onto the train. The issue is temperature, not rules: the sake in the station's chilled case is sold as requiring refrigeration and the run to Tokyo takes about three hours. Air travel is different: bottles over 100 ml must go in checked baggage.
